Dressing: olive oil mixed with lemon juice, a pinch of salt and chopped dill. You can add a little soy sauce if needed.

“Passionate Fish” lunchbox salad

You will need: 1 tin of trout, 100 g cooked prawns, 100 g squid, 2 hard-boiled eggs, 50 g red caviar, dill or other herbs to taste (about 50 g), mayonnaise, thin flatbread (lavash).

Chop the fish, prawns, squid and herbs, and mix in the chopped eggs and caviar. Spread a thin layer of mayonnaise over the flatbread for flavour and spread the mixture evenly on top, then roll it up. Put the dish in the fridge for two hours. Before serving, cut it into rounds 1.5–2 cm thick.

“Trembling with Feeling” appetiser

Quail’s eggs, slices of red smoked fish (salmon).

Boil the eggs and wrap each one in a strip of smoked fish. Secure with a cocktail stick and garnish with sprigs of greenery.

“Acapulco” love salad

You will need: 1 avocado, 100 g diced smoked chicken, 100 g cooked prawns, 1 teaspoon grated ginger, salt, pepper and mayonnaise. Cut the avocado in half and remove the stone. Scoop out the flesh, dice it and mix with the ginger, smoked chicken and prawns. Add salt, pepper and mayonnaise. Fill the avocado halves with the mixture, garnish with lettuce and serve on a plate.

Chicken of the East.

In a medium-sized container, combine all the marinade ingredients, stirring with a steady rhythm. Add the chicken, cut into cubes beforehand, and leave in a cool place for 2 hours. Remove the pieces of meat from the marinade and discard half of it. Pour the rest of the marinade into a small saucepan, bring to the boil, lower the heat and simmer until thick, then remove from the heat. Heat the grill to a medium temperature. Thread the chicken onto skewers, alternating with cubes of mango and pineapple. Season with salt and pepper to taste. Lower the grill temperature and brush it lightly with oil. Place the skewers on the rack, cover with a wide lid and cook for 12–15 minutes, turning occasionally and gently basting with the marinade. Take the skewers off the heat, sprinkle with sesame seeds and serve with warm soy sauce.

Fish stew in a pot.

1 kg fish fillets, a little flour, 1 cup sour cream, 1 cup stock, 7–8 potatoes, 1–3 onions, 70 g vegetable oil, 200 g cooked mushrooms, 3–4 cloves of garlic, parsley and dill, salt and pepper.

Cut the fish into pieces, salt them, roll in flour and fry in vegetable oil. Chop the onion and fry it in butter with the finely chopped mushrooms. Peel the potatoes, slice them and place them in individual clay pots, then add the fried onion and mushrooms. Lay the pieces of fish on top, season with salt, crushed garlic and pepper, pour in the stock and then the sour cream, and braise, covered, in a well-heated oven until done. Shake the pots from time to time while baking. Serve in the pot, sprinkled with herbs.
